    DSC_0568Meatloaf has long been a staple of the American table, both at home and in diners and other family-friendly restaurants. Although often (and wrongly) maligned for being simple, pedestrian or even boring, a good meatloaf is a hearty, healthy, affordable and tasty main course. Chef Kashia Cave of Meriden’s My City Kitchen not only makes a tremendous meatloaf, she even teaches children how to prepare it for their families. Chef Cave first learned how to cook at her grandmother’s apron strings in her native Trinidad, and although also trained in the culinary arts at schools in Italy and Connecticut, often spices up her cooking with a touch of island flavors. Here are five of her favorite meatloaf recipes, including beef, turkey and vegetarian options.
